First, we blend three authentic Arabica beans (Kenya, Ethiopia, Colombia). Grind to a fine sugar-like consistency. (Adjust based on your grinder and local humidity.)
Our espresso machine requires:
- Dark roast beans: 88-92°C
- Medium roast beans: 88-90°C
(Chamber temperature is critical.)
Typically, preheat thoroughly twice for 30 seconds each. (Alternatively, submerge the entire portafilter in a large bowl of boiling water).
When the portafilter reaches 92°C and the grind resembles fine granulated sugar, pour freshly boiled water over 18g of beans and one-eighth of the portafilter volume. Manually press the lever for a 10-second pre-infusion, feeling the water and grounds meld. Hold steady when the first drop falls (pressure reaches 2 Bar). Then increase pressure to 8-10 Bar.
Achieving this pressure is effortless for the stability of our micro manual lever espresso machine. A cup of espresso at its peak flavor is born. Finally, switch to a fresh cup and repeat the lever-pressing motion three times to extract every last drop from the puck. After knocking out the spent grounds, stack them up—it's surprisingly fun and satisfying.
